Kevin's Guacamole 🥑

Simple and delicious guacamole recipe. Goes great with fajitas, tacos, or simply as a dip.

Ingredients

  • 3 ripe Haas avocados
  • 1 cup chopped cilantro
  • 1/2 cup diced onion
  • 2 Roma tomatoes, seeded and diced
  • 1/2 jalapeno, seeded and diced
  • 1/2 tsp ground cumin
  • 1/2 tsp kosher salt
  • 2 fl oz lime juice
  • Optional 1/4 tsp cayenne pepper

Directions

  1. Peel avocados and coat thoroughly in lime juice. Cover and let stand 10-15 minutes
  2. Drain lime juice from avocados and save.
  3. Blend 2 avocados with cumin, salt, cayenne, some of the lime juice, and half of the cilantro in a food processor until smooth
  4. Mash the remaining avocado with a potato masher, leaving it rather chunky
  5. Combine all the avocados, tomatoes, onion, and the rest of the cilantro in a bowl with a mixing spoon
  6. Let stand in refrigerator for 2-3 hours
  7. Add additional lime juice to taste

for best results, place plastic wrap directly onto the surface of the guacamole to prevent oxidation when storing.
