Kevin's Guacamole 🥑
Simple and delicious guacamole recipe. Goes great with fajitas, tacos, or simply as a dip.

Ingredients
- 3 ripe Haas avocados
- 1 cup chopped cilantro
- 1/2 cup diced onion
- 2 Roma tomatoes, seeded and diced
- 1/2 jalapeno, seeded and diced
- 1/2 tsp ground cumin
- 1/2 tsp kosher salt
- 2 fl oz lime juice
- Optional 1/4 tsp cayenne pepper
Directions
- Peel avocados and coat thoroughly in lime juice. Cover and let stand 10-15 minutes
- Drain lime juice from avocados and save.
- Blend 2 avocados with cumin, salt, cayenne, some of the lime juice, and half of the cilantro in a food processor until smooth
- Mash the remaining avocado with a potato masher, leaving it rather chunky
- Combine all the avocados, tomatoes, onion, and the rest of the cilantro in a bowl with a mixing spoon
- Let stand in refrigerator for 2-3 hours
- Add additional lime juice to taste
for best results, place plastic wrap directly onto the surface of the guacamole to prevent oxidation when storing.
